Assamar \As"sa*mar\, n. [L. assare to roast + amarus, bitter.]
   (Chem.)
   The peculiar bitter substance, soft or liquid, and of a
   yellow color, produced when meat, bread, gum, sugar, starch,
   and the like, are roasted till they turn brown.
